WINEMAKER NOTES
WINEMAKER NOTES
ROSHAMBO was born from a simple truth: safe bets rarely make great stories. Remember Rock, Paper, Scissors? That split-second gamble, the thrill of the play, the rush of not knowing if youʼll win—or lose gloriously? Thatʼs us, bottled. This isnʼt wine for gatekeepers with fancy tasting notes. Itʼs for the ones who jump in headfirst, whoʼd rather take a daring swing than sit out the round. Every bottle is an invitation to bet big, play hard, and make every moment taste damn good. Our Award-Winning Winemaker Ondine Chattanʼs deep sourcing roots give us world-class fruit, but our spirit is pure rebellion.
Californiaʼs Central Coast is home to an exceptional range of Pinot Noir vineyards, defined by valleys shaped by alluvial, volcanic, and marine-derived soils. In search of sites that balance fruit, mineral, and earth-driven character, we source along the Highway 101 corridor, selecting standout parcels to craft our blend.
Each fermentation presents its own challenges, calling for careful extraction that highlights fruit while respecting Pinot Noirʼs lighter, nuanced character. This approach requires restraint, patience, and intention. Cold soaks, limited maceration, and a thoughtful appreciation of each lot form the foundation of the final blend. Thirteen months of aging in French oak adds subtle creamy character and smoothes the edges of individual lots to unify the wine. Oak tannins provide gentle structural support and contribute to a soft, cohesive mid-palate.
TASTING NOTES
TASTING NOTES
A playful tribute to Pinot Noir, this wine shows a rich cherry-red hue in the glass. Aromas of balsamic-glazed ripe strawberry and dried rose hip draw you in, framed by the classic interplay of fruit and earth that defines the variety. On the palate, flavors of raspberry and red currant are grounded by notes of black tea, loam, and a whisper of vanilla bean. The mid-palate is smooth and silky, with tangy,
pomegranate-like acidity on the finish that keeps the wine lively, fresh, and both
inviting and bold.
